
Ephraim (1823-1913) was our great-great grandfather; Hill Farmstead Brewery resides several hundred feet downhill from the land that he and his father settled. In his honor, this Imperial India Pale Ale is dutifully crafted from American malted barley, buckets of American hops, our ale yeast and water from our well. It is unfiltered and double dry hopped. Intensely aromatic and saturated with resinous hop flavor, this is the ale that I dream to have shared with Ephraim.

AROMA: Piney with dank and ripe fruit elements there too.
HEAD: Pretty gorgeous. Three finger tall. Tight and well formed for a long while.

Centennial, Chinook, Simcoe & Warrior DDH TIPA.
Ephraim seems to carry a good bush of pine twigs with him. There’s some mixed fuits and lemons in there too. But it’s first and foremost on the dry side. Spicies with dry herbs and pinch of dry grass. Body is somewhat robust with healthy dose of dry hops. Carbonation is pretty minimal, which works well with DDH and taste.
OTHER NOTES:
Nice one to enjoy. I like the mix of hops in this one and how they bring some good ol’ (and pretty balanced) kick to it. Nothing that special, just a really nice one to enjoy.
