5.8% Sour / Wild Ale
Brewed with Scottish malted barley, wheat and rolled oats. Primary fermented with a mixed culture including a blend of Brettanomyces strains isolated from Belgian Lambic producers. The second iteration of this beer is aged for four months, and packaged completely unfruited and unhopped to showcase the flavour characteristics of the mixed culture. We get super juicy stone and tropical fruits including passionfruit, pineapple, citrus and candied apricots. Drink young or age, this will get weirder. Artwork by James Scanlan

Une robe orange et mousse blanche. En bouche c’est très fruitée, l’acidité est bien là (propre à ce style) un peu trop sucrée pour moi. Je n’aime pas les Sour mais celle-ci ne me déplaît pas, agréablement surpris 🍺

This one is a golden sour using a mix of brews with different lambic cultures and not fermented over fruit, so a base golden sour..but it's also aged for four months. This brew is straw coloured and partly hazy with the fizz still very visible in-glass. Very fruity on the nose featuring pineapple, grapefruit, apricot, peach and maybe papaya. It smells sharp as a knife and funky. Ooh it's sharp yes, but it's not as sour as the previous holy goat I had the other day, the juiciness is stronger and the body is also different. It feels thicker in the mouth via a wheat-likeness and it finishes fairly clean, quite dry. Considering this is a golden sour I can only conclude it's the aging that has increased the fruit and changed the feel and overall approach. What a difference aging makes! I'll have to start storing away the odd bottle of other brews. This beer is refreshingly juicy and all without any fruit being used. It's impressive and enjoyable, though still a sharp sour so you're not knocking this back like a champ.
