6.0% Sour / Wild Ale
Tepache Inspired Wild Ale with Pineapple and Cinnamon Inspired by the spontaneously fermented Mexican beverage, Tepache. We fermented our golden sour base beer with a mixed culture of Brettanomyces and resident microflora present on the skins of pineapples. After primary fermentation was complete, we re-fermented and conditioned this beer with 400l of pressed pineapple juice, molasses sugar and whole Ceylon cinnamon.

Named after a 90s game and inspired by mexican Tepache, Grim Fandango is a pineapple sour essentially. It's golden amber coloured and slightly hazy with sweetness and pineapple jumping out at you on the nose. Very sour first sip but it does disappear very quickly too, by the finish it's clean and yet sweet. Pineapple cubes were a British sweet shop classic and I'm getting memories of them here with this brew. Molasses was used to sweeten this sour and it's resulted in a wonderfully sweet and sour balance. In fact the balance of the whole brew is lovely, the journey of sour to sweet to clean finish. Holy Goat use only real boy ingredients, fermenting this brew with real pineapple complete with the microflora even. Cinnamon from Sri Lanka is thankfully subtle and a sweet form of cinnamon rather than the hot/spicy kind. Im sure a lesser brewery would have produced a grim beer with over the top flavours and artificial ingredients. In a way it's a simple brew, just pineapple, but considering the brew process and other ingredients this beer has some complexity but the balance and quality presents simplicity. Cinnamon gradually increases in intensity, which is nice. Overall this beer isn't super easy to drink, you won't be knocking it back but it's a nice brew to sip. If your a fan of super sharp pineapple and sweet cinnamon you'll love this.
