6.2% Sour / Wild Ale
Golden Sour with Valencian Clementines. Blended from three batches of golden wort, each brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Gaining a deep citrus funk from 5 months aging in tank, we decided to pair this base beer with one of our favourite citrus fruits. We manually zested, juiced and pulped over 100kg of winter harvest clementines from an organic transitioning, pesticide free, Cabet family farm who are part of the Bétera Agricultural Cooperative in Valencia. In addition, we added 200l fresh juice, which was utilised with the spunding method to carbonate the beer using only natural fruit refermentation. This process has the added benefit of trapping delicate fruit aromatics in the beer.

From the crusher series or variety of brew is this new Clementine Crusher. On the darker end of amber in colour with a slight haze. Funky aromas of stone fruit and clementine. It's pretty deep and complex for a brew with one fruit but that's the golden sour for you that thanks to Holy Goats own yeast and bacteria culture, which provides an array of stone fruit. First sip is very sour and the organic clementine juice stands out and into of the aforementioned golden sour flavours. Very fruity without the use of New England IPA hops, which makes a change. It's not easy to drink being a sour but also not being a light one at that, also it's well carbonated. Real and quality clementine makes a clear difference. A golden sour without an addictive is nice but within a thin bandwidth. Whilst I'm not downing this brew I am gulping it down gladly. It's not my favourite Holy Goat brew but it is excellent and a further example of repeating quality and expressive of that care and attention.
