Probably not the best idea drinking with a kidney stone in situ, but I can't sit on beautiful brews forever! Pale golden coloured with slight haze and gentle fizz. I'm unfamiliar with kumquat fruit, never had it, but I have had the base golden sour by Holy Goat a few times so I can instantly notice the additions on the nose here. Soft and fruity with some sweetness that merges with the stone fruit and citrus of the golden sour base. First sip is satisfyingly sour and quite quickly countered by wheatyness, oats and barley. Second sip and beyond, now the fruitiness continues throughout and only really giving up at the very end. It's very morish because of the fruitiness and clean finish. Now I remember the other notable ingredient to this brew, is greek mountain tea, mount Olympus no less. Wild mountain tea and kumquat transform the base brew, even though they were added post-fermentation. It's as juicy as an IPA, obviously alot sharper as a sour and wheaty like a Saison but it's also unique because of the quality and authentic adjuncts from Greece. Refreshing and enjoyable drink, this is.
