Brewed with 55% malted barley, and 45% raw unmalted wheat, this beer takes inspiration from the classic Belgian wheat-beer style known as witbier. Typical of the style, we added coriander and orange peel into the boil, along with Perle hops. The hop addition has restrained the acid producing microbes of our mixed culture. Aged in tank for 5 months. Drink young, or age. This will get weirder.

This is the most lively beer I've ever cracked open, a tiny amount poured resulted in an eruption! Coriander and orange peel are very much present on the nose. Pale amber coloured and hazy appearance. Fairly sharp acidity with a medium fast finish. Obviously it's extremely lively in the mouth, similar to cider and the most carbonated blonde beer. It's a wheat beer or witbier like more famous examples as such Blue Moon or Erdinger Weißbier but this is more authentic to the Belgian origin, I assume as I've not had a Belgian witbier before! The orange and coriander flavours are stronger than the more famous wheat beers. It might just pair with a curry very well. Having a Holy Goat brew that's only had 5 months in a tank with not a barrel in sight is a bit odd! It comes across as fresh and refreshing with bright orange citrus, pleasing wheat and barley presented in a lively brew that goes down easily. Just be sure to pour it very slowly!
