Holy Goat’s Unicornucopia is a sour, bursting with Passionfruit, Mango & Peach flavours. Holy Goat say “This golden sour was fermented with one of our favourite Brettanomyces cultures – fermented extra warm at 30°C+ to push its ester production to the max, producing ripe tropical fruit flavours. Using the yeast’s flavour profile as a guide and inspiration, we transferred the base beer onto the leftover peaches and lees of our previous golden sour – Unicorn Wizard, along with a large addition of passionfruit and mango. The resultant beer represents our most heavily fruited offering to date, and provides a complex, pungent tsunami of tropical flavour.” 6%

True to golden ale form with visible carbonation and a slight haze. Bright aroma of mixed tropical juice, such as mango and passionfruit. First sip is very sour and satisfying just as it should be and second sip is luscious and refreshing. Stone fruit yeast brew then brewed again with passionfruit and mango, creating a complex fruity number of joy. Beautiful. Holy goat are my favourite sour makers for sure and this one doesn't disappoint. Strong passionfruit, peach, mango, grapefruit and salt. There's probably more flavours to unpack as time goes on and via deep inflection! The sourness does persist and for me this is a proper sour, no compromise down to a tart finishing beer here, it's all proper. Light and thin in the mouth but sharp and juicy with light to medium body and a long finish.
