This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. The result has layered malts with some lovely soft chocolate notes finished with a nice hop zing to help clean the palate. Sláinte

Lovely picturesque pint from the draft pour. What looks to be thick black body with two fingers of heavy, creamy, off white head.
Aromas of deep malt, burnt espresso, dark chocolate and a little toffee. Slight ashen scent from the over roasted notes.
Mouthfeel is mostly smooth with a mild carbonation to ad a little rough character. Taste is a nice deviation from the scent profile, more chocolate which eases the harshness of the burnt espresso, which allows more smooth malts to shine through, particularly the malted barley.
If you need a substitute for Guinness this will do but it is a very nice, smooth stout in it's own right too.
