Sahti 2/5. I bought the unlabeled bottle at Olarin Panimo and thought first that this is their Sahti. However, I was wrong; this is "Oravannahka" by Brew-Pub Gallows Bird. There's a complicated reason why they can't sell it at their own premises.
Pours murky, very deep dark brown. A gossamer, fawn ring emerges quickly on the surface and dies briefly away. The top is then fully flat.
The fragrance is burned grainy and dark bready. A moderate suggestion of licorice lingers in the shadows.
The taste is very recognizeable as to "Oravannahka". No doubt about it. Heavily roasted rye malt, rye bread, a distinct note of licorice and a drop of tar. This is truly palatable despite the fact that it hadn't probably been brewed with traditional Finnish baker's yeast.
The body is light to light-medium. It's clearly the weak point of this brew. The beer finishes with roasted rye malt, rye crackers, a hint of licorice and a tarry suggestion. The aftertaste steps on sticky tar but is rapidly released by the tastebuds.
The mouthfeel is somewhat light, slightly lip-glueing, roasty and unique. Very appealing although not rustic. The rating remains unchanged.

A glass of Sahti at Brew-Pub Gallows Bird. The Sahti is from their own microbrewery. It's interesting that a traditional 🇬🇧 brewpub produces an ancient 🇫🇮 brew.
Sahti seems to be going strong now as I have bought three different commercial Sahtis for the upcoming Christmas: Panimo Kiiski, Maku Brewing and Olarin Panimo. I read in the Facebook that Sonnisaari in Oulu has also put out its own Sahti, called SahtiMonni. My advice to Pint Please people in that corner: rush to brewery and have it!
Now this piece of gem: it pours murky, deep dark brown. Looks chocolatey. No carbonation, just a faint creamy ring of bubbles forms on the top and dies then away.
The scent is intensive: massive dark rye malt, a small injection of licorice and juniper twigs. This is extremely grainy and quite bready. Dark bready. 🤎
The taste portrays dark bread and strong medium-sweet rye malt. The grainy punch is unapologetic! This must be one of the maltiest Sahtis I've ever tasted! I can also pick subdued nuances of licorice, lingonberry and juniper as well as a remote hoppy whisper.
The palate is different from a traditional Sahti but not in a bad way. Not at all! 🤎🤎 What I'm not getting here is banana. Neither do I find clove. The yeast must be a brewing yeast instead of traditional baker's yeast. That's basically ok.
The body is light-medium. The Sahti finishes with slightly more bitter-leaning dark malt that contains a good proportion of rye. Licorice is still there but restrained. Faint mashed lingonberry shows its presence, as well. The aftertaste invites the tastebuds to the traditional malt sauna over long duration.
The mouthfeel is intense, light, relatively soft and smooth. This is rather unique and neatly balanced. Lip-glueing to a moderate extent, too. Surprisingly quaffable. 🤎🤎
