My 2500th beer in Pint Please. I need to have something else than a supermarket lager. An unblended Cantillon lambic is a good hit. Transparent, deep gold beer with subdued, short-lived carbonation unleashes a pure white, small-bubbled head that first elevates up to half a finger's height and settles soon down to a soapy lace ring on top. The beer leaves several tiny spots on the wall of the glass. The scent is astonishingly mild compared to the Saison 2014-2015: extraordinarily dry white wine, a bit of green grape mash and really sour winter apple. The wild yeast of Senne Valley is also relatively shy. The tongue likes but doesn't get excited of the gustatory palette that offers extraordinarily sour sparkling wine, accompanied by a tad sour winter apple, some mashed raw green gooseberries and a hint of winter apple. The wild yeast steps much more appealingly forward on the tongue than in the nostrils. Yet, I have to say that this is a fairly easy Unblended Lambic -- if you want to try that beerstyle and fear challenges, choose this one. Of course, if you mature this, it gains more character. The body is light. The beer finishes with the identical gustatory palette as upfront: I don't find any development between the actual and aftertaste. The finish lingers on the taste receptors for a rather long time. The mouthfeel is light, vinous, quite tart and somewhat puckering. It's also dry and mouth-drying but not excessively so. This is clearly a young Lambic, not enough character developed yet. This should be locked in a cellar for a few years to mature. Now this is rather easy even, a good gateway Traditional Lambic for those who want to take a walk on the wild yeasty side but are afraid of being eaten by a monster.
