This is a darker, more flavorful and complex version of One with a bit more hops added. The malt has a similar toffee flavor but is even more rich than One and the after-taste lasts longer due to the increased amount of hops. It is also a bit stronger alcohol-wise, but still not excessive. The malt is all English malt and the flavor hops are English as well. A small amount of wheat gives the beer a deeper body, in my opinion. It is named after the great English Prime Minister, Winston Churchill, whose nickname was The Bulldog. Churchill kept the British people optimistic during the seemingly imminent arrival of Nazi German forces in World War II and tenaciously turned the war around. Optimism also has a relatively famous and interesting English Bulldog as a brewery dog.
