Our single hop series is designed to teach us about the characteristics of several new hop varieties that have come along recently. This release uses Mosaic. As with the others we used it in a pale ale rather than an IPA as those tend to be subtler and far more refreshing and drinkable than their bigger cousins. As with the other beers we added hops for bittering, flavor, aroma and dry hopping. The Mosaic is described as having "A complex array of tropical fruit, citrus, berry, herbal, earthy and pine characteristics". Well it does have a lot going on including all of those things but also a lovely floral note. This is a lovely hop.
