This lambic is brewed using a traditional turbid mash technique and allowed to ferment before being transferred to chardonnay barrels to age while the wild yeast slowly develops a sour flavor. The Babalu is intensely sour with plenty of tannins from the wine barrel and subtle fruit flavors.
