VNBC and Salto both recognize that the health of business in Nederland is dependent on the diversity of business in Nederland, CO. Salto Coffee roasted a decadent blend of South American coffees for us: 1. Guatemala Ixil with notes of cinnamon, molasses, grape and chocolate; 2. El Salvador high grown with notes of tropical melon, apple blossom and delicate caramel. For the Very Nice part, we put together a smooth, rich porter recipe with ample chocolate and caramel malts balanced with the spicy citrus and slight grapefruit of Cascade hops. To prepare the coffee, we utilized a process called "Toddying" in which the coffee is slowly brewed in room temperature water for no less than 24 hours. This allows us to get the entire flavor profile without any of the acidity. The coffee is immediately recognizable in the finished product contributing fruity notes of plum and melon. On the back end, notes of cinnamon and chocolate compliment the roastiness of black patent and chocolate malts with Cascade hops finishing off with just a dash of bitter spiciness
