The base beer for chainsaw is roughly a Belgian blonde ale with flaked rice. From there, the beer is soured in the kettle using lactobacillus until a PH of 3.5 is reached. The beer is then boiled to kill the lacto. Odd13 fermented their half with 100% Brettanomyces and Big Choice used a Saccharomyces / Brettanomyces blend. The beer was dosed with 8 pounds per barrel of Dragonfruit puree in the fermenter. The result is a puckery Awesome Ale!
