Sour beers are definitely the craze here in Colorado, this would be our take on a sour. Starting with a Berliner Weisse, very traditional German style of beer in which bacteria is allowed to interact with the wort until the correct ph is achieved. The beer is then boiled as usual and fermented using a very clean American yeast. For another twist, we added Montmorency Cherries to give it a little more tartness and some sweetness to balance things out.
