31K is a retake on 30K IPA. We adjusted the grain bill and tweaked the hopping schedule. We added Bravo, Super Galena, and Simcoe hops in the boil. We then dry hopped with all 3 hops. The nose is bright and tropical, dominated by mango, pineapple, and hints of peach. Peach and pineapple run through the palate, with a nice dry mouth feel. The finish is dry with a fruity hop bitterness.
