Pure & Simple IPA is an International Style IPA brewed right here in San Diego. A relatively new category this style relies on tropical fruit flavors and aromas to differentiate from more usual West Coast style IPA's. To make the beer different from anything else that we brew, we selected UK Golden Promise for the base malt. For some color and complexity, we added Vienna malt, Carapils and light crystal malts. We decided that 6.5% ABV was the sweet spot for this delicious beer, strong enough to be satisfying but not over the top. To ensure enough bitterness we set the IBUs at 75, achieved with Nugget and Centennial as the early kettle additions. Flavor and aroma come from late kettle additions of Citra® and Mosaic™, with loads more of both these wonderful hops plus Amarillo® added as dry hops in the fermenter providing overwhelming aromas of guava, mango, pineapple and more!
