It's not too often we rebrew a single hop IPA, but when we do, it's because it's too delicious not to. Thankfully, Galaxy falls into this category. This hop varietal was developed, and is exclusively grown, in Australia. Galaxy was developed from Perle hops bred with a high alpha acid female hop grown in Australia; the resulting hop has an alpha acid content that ranges from 11% – 16%. Galaxy hops are typically used as late additions to accentuate its flavor and aromatic qualities. As a hop varietal, Galaxy has citrus, peach, and passion fruit flavors. Our IPA has a hop aroma that has a grapefruit-like citrus quality with a slight tropical fruit character. The flavor has grapefruit-like citrus notes and a touch of guava with some stone fruit character. Galaxy has an assertive hop bitterness that lasts well into the finish.
