What do you do when a plum tree falls over in Portland? Brew a beer with it, of course! Guest Brewer Simon dried, toasted, then soaked plum chips in Pinot Noir, then kilned that before we added it to the lager tanks. This Dubbel style was brewed with plum puree and cacao nibs, creating flavors of plum, banana, chocolate, toast, a touch of smoke, and a light wood note with a bit of tang from the pinot-aged wood. A complex, yet very approachable malty brew!
