We are using a little brewing trickery with this beer. We brewed a beer that in all ways is a stout, except for a key ingredient…dark roasted malts. How does one make a stout without the color and flavor of dark roasted malts? We added 60 pounds of Sumatra Mandheling coffee to the kettle to steep after the boil. The result is an amber colored brew with aromas of roasted coffee and white mocha. Try a sip with your eyes closed and see what your taste tells you, then open them up to see a pale brew before you.
