
Though we love our sessionable beers, we thought it was about time to push our brewhouse and see just how big of a beer we could produce. Volume 5 is the result. Making an 11.2% IPA results in a lot of flavor, and considering we always want balance in our beers, we needed something to combat the alcohol sweetness that results from such a big beer...enter ghost peppers!
Used properly, ghost peppers create alluring, earthy notes that when blended with the spicy Chinook hops, produce a savory nose and flavor profile. On first sip, the heat of the ghost peppers is mild, but as you work your way through the beer it begins to emerge ever so slightly.
This beer is IPA first and ghost pepper second. Combined, you're left with a hoppy, spicy, potent, and all around complex brew that gets better and better with each sip.
