Leap of Faith
3.5% Grodziskie / Gose / Lichtenhainer
Leap of Faith is an easy drinking Gose (Pronounced Goes-uh). Gose originated from the city of Goslar (Germany, popularized in Leipzig) and is made with salt and Coriander.
They can range from a little bit tart to puckering sour, although ours is rather subdued because we made it in a more traditional style. The salt, which is meant to mimic the mineral profile of the water in Goslar, gives the beer a savory character. Some people find this strange, but we LOVE it.
A Gose is tricky to pull off without the use of Lacto bacteria or added lactic acid. In the traditional beer, Lactobaccilus is added to the fermenter. For ours, we mashed acidulated malt from Germany for 20% of the grain bill. It's like any other malt for brewing, but it's finished with a coating of Lactic Acid.
The beer doesn't technically conform to the Reinheitsgebot because of the coriander (and the Lacto, but we're no German lawyers..) 3.5% ABV. Very easy-drinking, but a leap of faith experiment for us.
