Imperial ale inspired by a cherry pie ice cream: sounds interesting!
The smell is amazing as soon as the bottle is opened. We have tart cherry notes, with a nice pastry perspective smell. We have a bit of vanilla and discreet hints of lemon and tangerine.
The colour is clear, the bubbles are pretty big but there are only a few of them. I'd say the carbonatation is medium-low.
The taste is as good as the smell, which is amazing. We have a nice pastry cherry pie attack, followed by a gentle and controlled sweetness. Then we have some vanilla notes that are accompanied by hints of citrus (lemon and tangerine). The cherry is present throughout the degustation and stays in the aftertaste. It's well controlled and allows the other flavours to develop and express themselves.
The aftertaste has also some pastry tart pie notes that are highlighted by a beautiful sweetness. Feels like a cherry candy!
Of course the 8,6% are undetectable, which proves the quality of this beer that feels more like a 5-6% beverage. Of course the 8,6% gives some robustness to the beer, which adds to its complexity.
Overall, that's an amazing beer. It's complex and well balanced. I love it! Good work!
PS: the pastry crust flavour feels like ice cream cone crust which really adds up to the masterpiece this beer is!
