The barrel originates from the great Toro Albalá bodega, from Montilla-Moriles, a bit of an outlier of the sherry region. While that part is known for the sweet PX sherry wines, Toro Albalá focuses on refined fino and amontillado sherries as well. We added a little bit of a liqueur de tirage to push the still lambik to fermentation to get the subtle fino notes jump out of the glass. 100% 3 Fonteinen.
