In the world of German brewing, Kräusen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or “green” beer. And Aufkräusen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager.

Aroma: Smoky, but moderate. Charcuterie. Malty. Taste: Light, slightly smoky, malty, bready. I actually prefer this one over the märzen.

This is a Rauchbier that has been brewed with a traditional technique of krausening/kräusening. Here's a definition of the method as formulated on the Brew Your Own website: "Kräusening is the practice of adding a small amount of vigorously fermenting lager beer to a larger amount of lager beer that has just finished fermenting." Alright. This beer displays cloudy copper. The carbonation is wild, though fairly short-lived, as it unlocks a massive creamy head that basically fills the entire glass. Fortunately, the foamy tower collapses quickly to a normal lace ring and paints the glass with downpouring patterns. Smoked malt is evident in the scent. Not overwhelming but quite balanced. Interestingly, the smoke nuance evaporates somewhere after a short while. You have to pour again to get it back. For a short while. Toasted bread can also be detected. The hoppy sector is distinct and strongly grassy as well as a bit piney. The gustatory profile is mildly acrid smoky, intensively malty, bready, grassy, piney and relatively hoppy. The smoky note stays on the tongue unlike that in the air where it goes underground. The biggest plus here is the maltbody: it's medium-full to full, yet the beer clocks mere 4.5 %. Good stuff! The end is otherwise close to the real taste, except the acrid smoke flavor dominates and wins the competition of durability. The mouthfeel is almost full, smoky, effervescent, balanced and savory. A couple of bratwursts would go down easily. 😋 Rating adjusted to the fact that the beer plays in a bigger league than what the body would normally allow.
