Three varieties sourced from two local farmers. The fruits were hand-picked from the orchards.
We press the fruit and let it spontaneously ferment in lambic barrels.
Fermented, aged & bottled on the farm.

Lambic #2 sounds interesting! Looks totally lucid amber. A beautiful white velvety head of one finger. Long retention indeed.
The fragrance is definitely interesting: it's like a bit of dried apricot, peach flavored tea, a bit of pear, faint raisin and wheat malt. Obviously, it's quince. Very unique!
Dried apricot is copious on the tastebuds. So is peach tea. And quince. Apple, pear, a tad white wine, medium-strong wild yeast. Wheat malt, no question about it. Even a hint of cane sugar. Wow.
The body clocks light to light-medium. Maybe more on the light side. The finish is identical to upfront. Quince is obvious.
The mouthfeel is light-medium, tart, puckering, juicy, remotely funky and interestingly slightly heavy. Fairly tasty but not like the first Lambic.
