The cellar master from Bodegas Tradición selected twelve casks on which we further matured old lambik. Since 2020, we go and select our own casks directly with different bodegas, allowing us selecting from a wider array of barrel sizes and ages, sherry types, aromas and flavours. The Single Barrel series is the purest expression of the harmony between 3 Fonteinen lambik and traditional sherry. For this Single Barrel Zenne y Frontera, we bottled a three-and-a-half-year old lambik that has aged for a full year on a freshly emptied palo cortado barrel from Bodegas Fernández-Gao. Located in the centre of Jerez de la Frontera, this iconic house is one of the oldest ones around. Struggling in the last decades of the previous century, a young and rejuvenated team is now continuing the long legacy. The lambik used originates from six different brews and one third of the brews was crafted with locally grown Pajot cereals.
