bottle date: 18/05/2022. This iteration on Zenne y Frontera is a single Oloroso barrel lambik. The barrel was sourced with the last bodega of Josefa Perez Rosado, near the Church of Santiago in Jerez De La Frontera. When the barrel was emptied, we immediately transported it over to Beersel and we filled it with a two-year old lambik, and we let it sit for another full year. As such, at the moment of bottling, the weighted average age of the lambik was over 37 months. Two thirds of the grains used in brewing the lambik, was sourced from our Cereal Collective with Pajottenland farmers.
