Whilst we’re very serious about our craft here at Polly’s HQ, sometimes you’ve just got to take a silly concept and run with it. When one of our brewers shouted up on our group chat that they wanted to create a beer with a dry-hop bill “a bit like a sandwich”, we were immediately intrigued. When asked to elaborate, we were given the concept of two 5kg additions sandwiched between a meaty middle of 20kg, and lo – Layers was born. An IPA clocking in at that magic Polly’s ABV of 6.5% where everything just seems to work in harmony every single time, Mosaic is the meaty middle in this beer; with those signature apricot, mango and bubblegum notes expressing to the max, before our equal 5kg additions of Idaho 7 and Cryo Simcoe sandwich that sweetness in with zesty citrus notes. A silly concept? Absolutely. An awesome finished result? You’d better believe it.

Second time around on this as a re-release. Still a very good beer. It's interesting that the description on the website states citra, el Dorado and enigma which aren't stated on the can. Anyway, a great beer with many flavours of complexity.

Très bonne IPA galloise aux belles notes herbacées et légèrement boisées. Elle offre un côté gourmand et légèrement amer en fin de bouche. Vraiment bien faite cette quille.

What a complex beer this is. Aptly named layers with the different flavours going on. The extra % of alcohol makes a huge difference. Most beers are in the 5% bracket and are fabulous, but Polly's stronger ones in the 6 range are another level again. Quite orangey and grapefruit in flavour mostly but hints of others going on too. Stonking beer.

Pale golden hue with disappearing head and beautiful aromas on the nose. It's very hoppy and fruity via the trio of Idaho 7, Mosaic and Simcoe Cyro. Aromas of pineapple, bubblegum, mango, apricot, peach and clementine. It's soft in the mouth with fairly chewy texture, full bodied and a medium to long finish. Rich hoppiness thanks to Cyro which I'm not completely sold on, yet it undeniable they produce a increased flavour. The combination of concentrated hop and whole hops results in this deep flavour that's very pleasant yet not purist like me haha. In fact it's alot hoppier than it is fruity, which is odd. Usually with a heft hoppy brew like this the fruit flavours are bold and equal, if not greater, than the raw vegetal hop taste. Having said that clementine, peach, pineapple and bubblegum are identifiable and juicy. This hoppy taste taste lingers on the tongue in a dank, resinous oil manner, again thanks to the use of Cyro hops. It's very nice yet not perfect. At £4.50 it is impeccable value to money and flavour for money. Supermarket brews at £3.50 are watery squash in comparison. I've had DIPAs with less body and taste to it than this IPA by Polly's. And as such it reminds me of Polly's skill and importance to the UK craft brewing scene.
