6.5% Sour Red / Brown
A Flanders Red style beer, aged for eight months, conditioned on cherries, pinot noir skins and redcurrants. Pastore and Holy Goat used a historical method of making this beer, blending golden wild ale with a small portion of dark wild ale to achieve the Flanders Red base before hitting the beer with a lovely selection of red fruits – Frederiksdal cherries, pinot noir grape skins & redcurrants. The resulting beer has a rich malt character, is acidic, super juicy & refreshing. Ram & Goat’ is our first collaborative brew with HOLY GOAT (hopefully the first of many as we love the team up there and the beers that they make). We don’t make many Flanders Red style beers here but Holy Goat are known for this style and we wanted to give it a go as we are huge fans of the style here.

One I've been saving, I'm already regretting opening this, I could or should have kept this for another year but alas I've cracked it open now! I love this brew, probably my favourite Flanders red to date and I wonder if it will be slightly different this time as it was bottled July 2022. Sweet cherry on the nose mostly, with tannin from pinot noir skins and juicy red current. Read my previous review for the full low-down. This time I'm getting more balsamic vinegar, alot more, but it's still light and juicy. Maybe that malty balsamic element is more pronounced with age or it's the fruits that are softer. The first sip was still decently sour though it didn't blow me head off. Speaking of sour, it's consistently so. All the flavours from last time are there, but perhaps a little rounded and balanced. It's still beautiful.

I’d liken this to a white wine spritz except it’s red. Vinous, tart, acidic, fruity, sour and refreshing.

Murky ruby coloured is this flanders red Lambic brew with a gentle sparkle in the glass. You can smell the pinot noir already and if it weren't for the murky hue then it would look like a glass of beaune! Red currents and cherries were also used for the second fermentation with the pinot noir skins, this is reflected on the nose though red wine dominates this bouquet of aroma. You can even smell the barrel aging that further enhances the sense of wine. Ooh wow, the first sip of a proper sour always gets to me, as it should and it's beautiful, hope that doesn't make me a masochist! The second sip is alot more manageable and I can start to taste it more critically. Red current is fairly prominent and this keeps the feel of the brew light. Cherry gives it a sweeter and darker feel and the pinot noir is lush and warming, bonding with the barrel and producing familiarity to my time drinking wine some years ago. Burgundy is my favourite and this flanders red migrates there earnestly. Unlike my first Flanders red, this one has little to no balsamic vinegar vibe, but you could search and find it amongst the grape skins. Each sip is beautiful. Complexity to unravel and appreciate, light in the mouth for your pleasure with a long pronounced finish where this beer travels from UK to Belgium and onto Northern France. I'm going to say it's approachable, despite being a proper sour and furthermore being a Flanders red. I say that to encourage others to experiment and experience more, but also because it is light, juicy, warming, with only minimal hints of salt and vinegar. Obviously your not going to knock four of these back with the lads but it's one to sit down, sip and journey with.
