
Solid IPA, not overly hoppy to override the flavours from wild yeast fermentation. Hope Cat 12 brings this one back.

Brewed with a wild yeast called Saccharomyces trois, this wild IPA pours a slightly cloudy, apricot gold.
It starts out with a large thick whipped egg white head that settles to normalcy and leaves spotty sparse lacing.
Aromatically the hops and yeast in this beer present Pine, fresh lupulin, mango, passinfruit, grapefruit, citrus, lemon and orange rind, hints of melon, and spicy phenols. The malts adds a slight caramel doughy biscuit.
It is soft and voluptuous on the palate.
Flavours include tropical fruit, citrus, pine, melon and some of the spicy and doughy notes. Also there is a tartness that comes through and is a pleasant addition to the hops. I like it

Well balanced IPA that allows the taster to enjoy the wild yeast fermentation. Pairs well with tacos. Hope that Cat 12 revisits this one.
