5.0% Sour / Wild Ale
Pineapple wild sour. Vintage 2021. Soured with house lactobacillus culture, fermented with lambic and bruxellensis yeasts. Olut on hapatettu omalla maitohappobakteerikannalla ja käytetty kahdella eri Brettanomyces-hiivalla. Olut on kypsytetty tammilastujen kanssa ja maustettu reilulla määrällä ananasta. Olut on valmistettu yhteistyössä Lohjalaisen olutharrastaja Perttu Maksimaisen kanssa. Idea tähän olueen on syntynyt Niittykanta-nimisessä saaressa joka on muinainen laidunmaa. Esikuvana ovat olleet Belgialaiset hapanoluet. Parasta nautittuna jääkylmänä laiturilla, varpaat vedessä tai avannossa.

Muutaman vuoden kypsytettyä villihiiva souria. Happamuutta on reilusti. Sitrukset maistuvat alkuun reilusti. Kun tietää, että tässä pitäisi olla ananasta, niin löytyyhän sitä hieman. Tai voi olla uskon asiakin. Maussa myös reilusti tammisuutta tynnyrikypsytyksestä.

Lunch beer amidst renovation. Clear, deep rusty beer, even a bit red-leaning. Carbonation behaves well as it produces a clean white head that swells one finger thick. Short retention kills the head fast. Interesting scent! Mmm. Like wild yeast received. Pineapple makes it hard to detect, I'd rather go for green apple in a blind test. Maybe also a bit of green gooseberry. Definitely, green gooseberry. The scent promises a lot — if not a heaven but at least a stairway to it. Let's see if the promise is kept or broken. There we go. Wild yeast is massive. Like a Lambic! Really powerful, it wellnigh overshadows other flavors. I still can't identify pineapple but would rather argue for white wine, green apple and green gooseberry. Raw as hell. The body is light. The end is highly vinous, very dry white wine, raw fruity, wild yeasty. Ehhh. Good stuff. Absolutely a Wild Ale. Shawty seen the aftertaste, said it look like pineapple; shawty super thick, bet it tastes like pineapple. The mouthfeel is light, very tart, puckering, acidic and extraordinarily vinous. Raw and slightly edgy but reasonably Lambic-y. Therefore Belgiany. I need to apply bunches of toothpaste for the next week to prevent a loss of enamel. 😁 P.S. The brewery promises that the beer is best before 2050...
