My second Christmas Sahti. This heretical brew is a berry flavored version: this year raspberry. Last year we tried a cranberry flavored Sahti with glogg spices. Now we left spices away and used self-picked wild raspberries. The Sahti looks murky, surprisingly garnet-hued brown. Carbonation, again, is wellnigh nonexistent. The head is even weaker than that of the standard Christmas Sahti. The top is basically flat all the time. Raspberry opens the doors wide open and steps into the main hall. It's more or less then only component that my nose is able to identify. Only a moderate malty note accompanies the hefty natural raspberry mash. The taste is innovative and surely unique: intensive raspberry mash dances with dark malt and faint cookie. Banana hides behind the main cocktail but allows one still to experience a reasonable amount of fermented banana. Alcohol is detectable to a moderate extent. Generally speaking, the palate is intriguing but deviates quite much from the standard Sahti universe. The body is medium-full to full. The finish elevates raspberry higher and tweaks it a little more sour. I can also pick a moderate nuance of cranberry although there is not a single molecule of cranberry in this version. The aftertaste is convicted as a heretic and burned on a bonfire. So much for that. The mouthfeel is intense, rich in berries, gardeny, a bit alcoholic and nicely warming. Not really like a traditional Sahti. Should it be then? Some people say yes, some people just don't care. I'm one of those who let all the flowers blossom: traditional or experimental, anything goes. Still, raspberry is too dominant here.
