Merry Christmas to all folks! 🎅🏼🤶🏻🎄🎁🍗🍻 Christmas is not Christmas without something noble: therefore homebrewed Sahti is absolutely necessary! The Sahti pours turbid, dark muddy brown. A red hue decorates the color nicely. Carbonation is basically absent or extremely limited. A faint ring of medium-sized bubbles emerges on the surface and remains there for a while. The scent is malty and worty: wortiness hints at rawness but it shouldn't be the case since this comes soon three weeks old. Roasted rye flour and rye porridge dominate the scent. A bit harsh malt escorts modest lingonberry. This is interesting as this Sahti is not particularly rye-rich, neither is there lingonberry in the brew! The taste turns much more traditional than what the fragrance suggests: banana is surprising hefty on the tongue. Overripe for sure. Sweet malt, a silent sigh of raisin and warming alcohol accompany the fermented-banana-flavored medley appealingly. The body is medium-full to full. This is probably the strongest Sahti that we have so far produced — 9.1 % — and feels nice. The finish is strong and moderately alcoholic, with the same components as earlier. The aftertaste gets scared when Santa Claus descends from the chimney and says "ho ho ho". The mouthfeel is relatively full, a tad sticky and lip-glueing as well as smooth. It's also thick, distantly alcoholic and warming. This is probably sweeter than many of our previous Sahtis and also more boozy. However, the level of alcohol is still manageable and not disturbing. Works nicely with the Christmas meal! There's another version of Sahti still to taste. 😉
