Titillating Genome of Sahti: Cara + Black, Finland
4.0
Ok, now the second Sahti. The same brewing date as in the previous beer. In addition to the regular Sahti ingredients and the same 2.5 % of English black malt, this one contains 5 % Belgian caramel malt of the malt bill. The color is identical, very deep dark brown and allows no light through it. A similar ring of sand-hued bubbles emerges on the side of the top, just to disappear as quickly as it came. Sweet malt, part of which is clearly rye, fermented banana, an unmistakable note of juniper and a whisper of dark bread race for the victory to get up to my nostrils and, eventually, to my brain. Ok, more promising! Alcohol is nowhere, at least not in the air. Good. 👍🏻 Sweet malt and fermented banana merge with a smaller amendment of dark biscuit, a bit of rye malt, juniper needles and a caramelly twist. It's really interesting that a week ago the caramelly flavor was distinctly like toffee, now it's "only" caramel. It seems that I should have reviewed both these beers last weekend; my reaction with this was like wow. It's still nice but not a wow anymore. Well, life is life and a few other legedary one-liners. This is a living brew that is normally at its best at around four weeks but these two seem to have already passed that line at the age of two weeks. You never know. The body is medium to medium-full, maybe closer to the former than the latter. The finish carries over unchanged from upfront, only a slightly bitter flavor in the malt package grows modestly toward the end. I don't experience any alcoholic tang, not in the finish, nor earlier. The aftertaste feels relieved as the ants have stopped tickling and biting after a while. The mouthfeel is relatively smooth, decently soft and a tad sticky. It's also slightly warming but not alcoholic in my opinion. I would say that the mouthfeel is also fairly balanced.
