Great Lakes Brewery of Toronto, ON have always embraced the craft beer culture and collaboration. Years ago when I was just starting out in the brewing industry we collaborated and came up with what we thought was a great idea for a pilot batch saison which would embrace lime zest, peppercorns, and the lemon-lime character of Sorachi Ace hops. We liked it so much, we thought it’d be great to brew it here at the Brewhouse years later. A lot of limes were zested that day.
