Time is now to write the fourth chapter of the story. Last time, the tasting of "Magnetic Deviation" (= batch 3 of our Sahti) concluded that the brewing method we used at that particular time didn't produce as successful Sahti as we wanted. Therefore, we had to recalibrate the course so as to find the same tasty outcome we managed to brew in batches 1 and 2. This is now batch 4. Back to basics. The Sahti shows a semiclear, cinnamon brown color. The nonexistent carbonation lays a truly rushed ring of beige bubbles on the top that then becomes totally still. Let me breathe the fragrance of this ancient goddess. Banana is present, no question about it. Good. Sweet malt can't be missed either although it's not particularly abundant. That's promising as well. I'm getting also medium-sweet bun, a suggestion of dried apricot and something very weak that I associate with clove. It may also be an illusion. Anyway, not a bad start. Then let's take a sip. The familiar components of banana, sweet malt, including rye, bun, sweet biscuit and a pinch of dried apricot are fairly easily identifiable. All the pieces of the puzzle are pretty nicely on their right places. On the other hand, even though the taste is reasonably sweet, there's also a dry note in it. Provided that the ABV is 8.8 % -- that is higher than any of the batches before --, and the final gravity amounted to 1.014, the subsequent dryness is no surprise. It's fully natural but not something that we particularly wanted there. And talking about the ABV, alcohol can be felt in the throat, if not actually tasted. It's also a characteristics that I'd like to get rid of in the future. The body ranges perhaps between medium and medium-full. Decent enough but not a wow. The finish offers sweet malt and fermented overripe banana that even beats the banana flavor in intensity in the actual taste. Furthermore, I find old leftover bun, and a whisper of dried apricot. Not bad. The aftertaste practices a shamanistic rite for the tastebuds for quite some time. The mouthfeel is medium-full, somewhat sappy and lip-glueing but simultaneously dryish. It's surprisingly refreshing, satiating, rustic, a bit throat-warming and quaffable. The rerouting of our navigation worked fine to some extent but not perfectly. This is much better than the previous batch but still falls short of the tasty fullness of batches 1 and 2. In addition, the product ended up a bit too dry. Again. Obviously we still need to go back to the nautical chart and try to finetune the course. We'll find the home port one day, I'm sure.
