Time to do a profound analysis of our second Sahti. We brewed this on 18 June and put it in canisters on 21 June since when it has been settling in the fridge. The Sahti pours medium-misty, raisin-brown. A faint red hue can be detected, especially against the light. No actual head as there's basically no carbonation. The nose receives, very predictable, generous sweet malt and a decent amount of banana, accompanied by sweet cantaloupe, a bit of biscuit and faint raisin. Very promising. 👍🏻 The taste portrays bags of sweet malt, hefty banana, biscuit and a tiny amendment of caramel. Smaller injections of fermented cantaloupe, raisin and prune follow in the immediate proximity. Rye malt is sweet and doesn't bring in any harshness at all. Alcohol is absent, so is the warming impression. The taste profile, in comparison to the first batch, is slightly sweeter and less throat-warming. It seems that the residual sugars are a bit more pronounced here, which could also explain the lower ABV. The body is, again, medium-full. The beer finishes with loads of sweet malt, powerful banana, a bit of raisin, distant prune and a biscuity whisper. The aftertaste teaches the tastebuds for some time how to worship the ancient Finnish pagan gods. The mouthfeel is relatively sappy, a tad sticky and lip-glueing as well as medium-full. It's surely very savory and satiating as well as considerably rustic. This beerstyle is naturally flat and uncarbonated as it's a historical real ale. Very tasty and dangerously easy. Even better than the first brew. 😋
