This cider has an interesting story: it's made of apples of abandoned appletrees and brewed with spontaneous fermentation. The cider pours limpid, deep gold with a hair-thin ring of minuscule bubbles circling the surface. The gustatory experience serves massive sour apple mash, fully attenuated and no sugar at all, with a perfumy nuance accompanying the package. The taste is strange. Extraordinarily sour apple nectar and a recognizeable soapy touch season the gustatory offer. Not sure if it's supposed to be like this. (I talked to the brewer who convinced me that it's actually like this.) The cider finishes with substantially sour apple mash that is flavored with a soapy twist. It's also a bit vinous. The mouthfeel is challenging. It's moreover strong, earthy, really tart as well as a tad puckering. Furthermore, the mouthfeel is relatively heavy on one hand but very natural on the other. One could also say it's synthetic. I'm confused. Good stuff but falls short of perfection due to perfuminess soapiness.
