This is a single batch brew, the 317th brew we’ve made. We wanted to create something special, a brew to share and savour. During production we didn’t find a name for it, so the brew number just seemed to stick. We used no less than eight different malts to get the balance of colour, aroma and flavour we sought. We were sparing on the hops to let the malts shine through, using predominantly English hops for bittering, aroma and flavour. We also added Ginger, Cinnamon and Dried Figs. The result is a complex beer, rich and full-bodied. It has a dark, red-brown colour and superb clarity. The malts combine to give great depth of flavour. The spice and ginger create subtle aromas and after-tastes, with the figs offering a tiny sweetness on the palate. This beer will change over time as it matures, like a fine wine. The high alcohol content and the hops acts as natural preservative which will ensure it can be enjoyed well beyond it’s Best Before date! Enjoy it now or store it (upright) to mature further.
