Big Bad Swan 5.7%, Brewhouse & Kitchen, England

Big Bad Swan
5.7% Black IPA / Cascadian Dark Ale
Their regular in-house brew Black Swan IPA. However this one has been aged for 2 months in an old Jim Beam oak cask with added wild yeast, then keg conditioned in the cellar before release.

A fantastic take on a regular black IPA, which in itself is already a mash up of IPA and stout/porter. The wild yeast has added a sour aroma, evident on the nose. The first few sips give a bitter burnt taste, however the flavour develops through the pint to give a nice roastiness followed by an almost Geuze like sourness to finish
